Carrot Cake

Carrot Cake

1 tsp. cinnamon
2 cups sugar
2 cups flour
1 tsp salt
4 eggs
2 tsp baking soda
1 1/2 cups vegetable oil
3 cups carrots, grated(about 6 carrots)

Blend eggs, sugar and oil. Stir in flour and baking soda. Next add the carrots and blend. If desired add 1/2 cup of nuts and mix. Pour into two square pans or one 13×9 pan. Bake at 350 for an hour. Let it cool and frost. I prefer a cream cheese frosting.
