Souvlaki and Tsaziki sauce |

Souvlaki
| 1 beef roast cut into 1 inch cubes approximately 5 lbs.
(may also substitute chicken, pork or lamb) 1/2 cup parsley, chopped 6 cloves garlic, chopped 1 large onion, chopped 2 large tomatoes, chopped 3/4 ounce cumin 1 tsp. of each, Salt and Pepper Olive oil, enough to submerse meat approximately 30 oz.

| Mix all the above together and refrigerate overnight. Put pieces of meet on skewers. Dump all the juices on the tray with the skewers. Barbecue meat trying to leave as much of the pieces from the marinade on skewers. Close the cover on barbecue and don't worry about the flame it will burn out. Keep an eye on the meat so it doesn't burn. |
Tsaziki "Cucumber Sauce"
| 6 cucumbers, grated and drained "well" 1 large container of sour cream 4 cloves fresh garlic, chopped 3 tbsp. vinegar, then add more to taste 1/4 cup fresh parsley, chopped 2 tsp. salt

| Blend all the ingredients together and refrigerate overnight. You can put bread (stale bread works best) on the sides of the bowl to absorb excess water from the cucumbers. Next day remove the bread from the bowl. |
Souvlaki on Pita Bread
| tomatoes, chopped onions, chopped parsley, chopped pita bread tsaziki sauce souvlaki meat

| On a warm pita bread add souvlaki meat. Garnish with pinches
of onion, tomatoes, parsley. Then add tsaziki sauce to lightly cover garnishing. Fold pita
as if it were a taco and eat!
